The spiciness of a pepper is measured in Scoville Heat Units (SHU). SHU is measured based on the concentration capsaicin found in the pepper. Capsaicin is a chemical that makes the pepper feel “hot” to the taste and gives that burning sensation that spicy food lovers crave. A jalapeno pepper is typically around 5,000 SHU but there are hotter variants of the pepper that are over 100,000 SHU.

The Ghost Pepper is probably the most famous super-hot pepper. It is often mistakenly called the hottest pepper in the world but there are a few peppers hotter than the ghost pepper.

Here it is. The hottest pepper in the world. The Carolina Reaper pepper even has a stinger like point, making it look like you are about to eat a wrinkly red wasp. The Carolina Reaper is known to actually have a good flavor, despite its extreme heat.
